Garlic and Cilantro Sauce

This sauce is simple and quick to prepare 
and is flexible to combine with white or red meat.  
The ingredients such as garlic and vinegar can be adjusted according to personal taste
and can be prepared omitting salt for low sodium diets.

Garlic Cilantro Mojo
1 bunch of cilantro
5 cloves of garlic
½ teaspoon salt
¼ teaspoon pepper
¼ cup olive oil
Juice of 1 lemon
½ cup vinegar
Shave parsley and discard as many stems as possible
Crush the garlic cloves with the salt in a mortar
If you don´t  have a mortar, crush the garlic a little bit before putting them in the blender

Pour cilantro leaves and garlic into a blender
 Add the vinegar, lemon juice, olive oil and pepper
liquefy until is all mixed.
It will preserve very well in the fridge for two weeks.
Can be used to marinate chicken or fish before baking them.
